  • 2 tablespoons olive oil
  • 2 (15-ounce) cans chickpeas, rinsed and drained
  • 1/4 cup red onion, finely diced
  • 1/4 cup cilantro, chopped
  • Juice of 2 limes
  • 1 ripe avocado
  • 4 large tortillas
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chili sauce (like Sriracha or Gochujang)
  • 1 tablespoon olive oil (for chickpea filling)
  • 1/4 cup plain Greek yogurt (or vegan alternative)
  • Juice of 1/2 lime
  • 2 tablespoons water (or more to desired consistency)
  • 1/4 teaspoon salt (for avocado crema)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Break cauliflower into florets; toss with olive oil, chili powder, cumin, garlic powder, salt, and pepper.
  3. Spread cauliflower on a baking sheet and roast for about 25 minutes until golden brown.
  4. In a bowl, mix rinsed chickpeas with diced red onion, chopped cilantro, lime juice, olive oil, chili sauce, additional spices, and salt.
  5. Mash avocado in another bowl; mix with yogurt, lime juice, water, and salt.
