Instructions
- Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
- In a stand mixer, cream together butter, granulated sugar, and brown sugar until light and fluffy (about 5 minutes).
- Add eggs one at a time and vanilla extract; mix until combined.
- Sift together flour, cornstarch, salt, baking soda, and baking powder; gradually add to wet ingredients.
- Fold in chocolate chips and sprinkles until evenly distributed.
- Portion dough into 4 oz rounds; flatten each slightly.
- Place a vegan marshmallow in the center of each round and enclose the dough completely around it.
- Chill dough balls in the refrigerator for at least 2 hours.
- Bake for 14–16 minutes or until edges are golden brown; cool on trays before transferring.
