  • 1 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 cup finely chopped hazelnuts (for rolling)
  • 1/2 cup chocolate hazelnut spread
  • Extra whole hazelnuts for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter and granulated sugar using an electric mixer until light and fluffy. Mix in vanilla extract.
  3. In another bowl, whisk together flour, cocoa powder, and salt. Gradually add this dry mixture to the butter mixture until combined.
  4. Shape dough into 1-inch balls and roll each in chopped hazelnuts. Place on prepared baking sheets with space in between.
  5. Press a thumbprint indentation into each ball and bake for 12-14 minutes until set but not hard.
  6. Remove from oven and re-press indentations if necessary; fill each cookie with about a teaspoon of chocolate hazelnut spread and optionally garnish with whole hazelnuts.
  7. Cool on wire racks before serving.
