Ingredients

  • 1 cup butter (room temperature)
  • 2 cups white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 2 ounces chocolate almond bark
  • 1 ½ cups white chocolate chips
  • ½ can sweetened condensed milk (7 oz)
  • ½ teaspoon mint extract
  • Green food coloring

Instructions

  1. In a large mixing bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla.
  2. Gradually add cocoa powder, salt, baking soda, baking powder, and flour until just combined.
  3. Roll dough into 1-inch balls and place on greased or parchment-lined baking sheets. Create a thumbprint in the center of each cookie.
  4. Preheat oven to 350°F (175°C) and bake for about 12 minutes. If the thumbprints disappear while baking, press down gently again.
  5. Allow cookies to cool on the baking sheet for 2 minutes before transferring them to a wire rack.
  6. For the fudge filling, melt white chocolate chips and half of the sweetened condensed milk over medium heat until smooth. Stir in mint extract.
  7. Spoon the fudge into each cookie’s thumbprint and drizzle melted chocolate almond bark over the top. Let set before serving.
