- 2 cups white sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 cup unsweetened cocoa powder
- ½ teaspoon salt
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- 2 ounces chocolate almond bark
- 1 ½ cups white chocolate chips
- ½ can sweetened condensed milk (7 oz)
- ½ teaspoon mint extract
- Green food coloring
Instructions
- In a large mixing bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla.
- Gradually add cocoa powder, salt, baking soda, baking powder, and flour until just combined.
- Roll dough into 1-inch balls and place on greased or parchment-lined baking sheets. Create a thumbprint in the center of each cookie.
- Preheat oven to 350°F (175°C) and bake for about 12 minutes. If the thumbprints disappear while baking, press down gently again.
- Allow cookies to cool on the baking sheet for 2 minutes before transferring them to a wire rack.
- For the fudge filling, melt white chocolate chips and half of the sweetened condensed milk over medium heat until smooth. Stir in mint extract.
- Spoon the fudge into each cookie’s thumbprint and drizzle melted chocolate almond bark over the top. Let set before serving.
