  • 3 large eggs
  • 1 cup vegetable oil
  • 1 tbsp vanilla extract
  • 3 cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 2 cups grated zucchini (un-drained)
  • 12 oz semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350ºF and prepare two loaf pans with baking spray.

  3. Add flour, cocoa powder, salt, baking powder, baking soda, cinnamon, and nutmeg; mix until just combined.
  4. Fold in grated zucchini and 8 oz of chocolate chips.
  5. Divide batter into prepared pans and top with remaining chocolate chips.
  6. Bake for 50–60 minutes or until a toothpick comes out clean.
  7. Cool for 5–10 minutes in pans before transferring to racks.
