  • 2 large eggs

  • Vegetable oil, for frying
  • ½ cup sugar (for coating)
  • 1 teaspoon ground cinnamon
  • 1 pint vanilla ice cream (or any flavor you love)

Instructions

  1. In a saucepan, bring 1 cup water, 2.5 tablespoons sugar, ½ teaspoon salt, and 2 tablespoons unsalted butter to a boil.
  2. Stir in 1 cup all-purpose flour until it forms a ball, then let cool for 5 minutes.
  3. Beat in 2 large eggs one at a time and mix in ½ teaspoon vanilla extract until smooth.
  4. Heat vegetable oil in a deep skillet to 350°F (175°C).
  5. Pipe dough into 3-inch circles onto parchment paper and fry until golden brown (about 2 minutes per side). Drain on paper towels.
  6. Roll warm churros in a mixture of ½ cup sugar and 1 teaspoon ground cinnamon.
  7. Assemble by placing a scoop of ice cream between two churro circles.
