  • 1/4 cup cold unsalted butter, cut into small pieces for streusel topping

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together flour, cinnamon, baking soda, salt, and nutmeg.
  3. In another bowl, mix sugar, vegetable oil, eggs, and vanilla extract until combined.
  4. Gradually add the wet mixture to the dry ingredients; stir gently until just mixed.
  5. Fold in grated zucchini and nuts if using.
  6. Pour batter into the prepared loaf pan.
  7. For the streusel topping, mix flour, brown sugar, granulated sugar, and cinnamon; cut in cold butter until crumbly.
