  • 1 cup mayonnaise
  • 1/4 cup Italian dressing
  • 2 tablespoons white vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1 cup diced cucumber
  • 1/2 cup diced red onion
  • 1/2 cup sliced black olives
  • 1/4 cup chopped fresh parsley
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped turkey slices

Instructions

  1. Cook the elbow macaroni in salted boiling water until al dente (approximately 8-10 minutes). Drain and rinse with cold water to cool.
  2. In a large mixing bowl, whisk together mayonnaise, Italian dressing, white vinegar, Dijon mustard, sugar, salt, and black pepper until smooth.
  3. Add the cooled macaroni to the dressing and toss gently to coat.
  4. Stir in cherry tomatoes, cucumber, red onion, black olives, and parsley until evenly distributed.
  5. If desired, fold in chopped turkey slices.
  6. Top with grated Parmesan cheese and mix again.
  7. Cover and refrigerate for at least one hour before serving to enhance flavors.
