Ingredients
- 1.5 lbs small potatoes (gold or red-skinned)
- 2 tbsp Extra Virgin Olive Oil
- 1 tbsp red apple vinegar
- 1 tbsp Dijon mustard
- 4 tbsp fresh dill, chopped
- 1 shallot, diced
- 5–6 cornichons, diced
- 1 tbsp cornichon juice
- 1 tbsp salt
- 1/4 tsp freshly ground black pepper
Instructions
- Cook the Potatoes: Halve or quarter the small potatoes and place them in a large pot. Cover with water by an inch, add salt, and bring to a boil. Reduce heat and simmer for about 15 minutes until tender. Drain and rinse under cold water.
- Prepare the Dressing: In a mixing bowl, whisk together Extra Virgin Olive Oil, red apple vinegar, Dijon mustard, salt, and pepper until emulsified. Add dill, shallots, cornichons, and cornichon juice; mix well.
- Combine: Add warm potatoes to the dressing and gently toss to coat evenly.
