  • 1.5 lbs small potatoes (gold or red-skinned)
  • 2 tbsp Extra Virgin Olive Oil
  • 1 tbsp red apple vinegar
  • 1 tbsp Dijon mustard
  • 4 tbsp fresh dill, chopped
  • 1 shallot, diced
  • 56 cornichons, diced
  • 1 tbsp cornichon juice
  • 1 tbsp salt
  • 1/4 tsp freshly ground black pepper

Instructions

  1. Cook the Potatoes: Halve or quarter the small potatoes and place them in a large pot. Cover with water by an inch, add salt, and bring to a boil. Reduce heat and simmer for about 15 minutes until tender. Drain and rinse under cold water.
  2. Prepare the Dressing: In a mixing bowl, whisk together Extra Virgin Olive Oil, red apple vinegar, Dijon mustard, salt, and pepper until emulsified. Add dill, shallots, cornichons, and cornichon juice; mix well.
  3. Combine: Add warm potatoes to the dressing and gently toss to coat evenly.
  4. Serve: Enjoy warm or chill before serving.
