  • 1 yellow onion (diced)
  • 3 carrots (sliced)
  • 2 stalks celery (sliced)
  • 1 tablespoon tomato paste
  • 3 cloves garlic (minced)
  • 2 cups dry green lentils (sorted and rinsed)
  • 1 can crushed tomatoes (14.5 ounces)
  • 4 cups vegetable broth
  • 34 cups water
  • Fresh lemon juice
  • Chopped parsley (for garnish)

Instructions

  1. In a large pot or Dutch oven, warm olive oil over medium heat. Add diced onion, sauté for 2-3 minutes until translucent.
  2. Add sliced carrots and celery; sauté for an additional minute. Stir in tomato paste and cook for another 2-3 minutes.
  3. Add minced garlic, Italian seasoning, paprika, cumin, bay leaves, and black pepper; sauté for about 1 minute.
  4. Pour in lentils, crushed tomatoes, vegetable broth, and 3 cups of water. Bring to a boil over high heat.
  5. Reduce heat to medium-low; simmer uncovered for 20-30 minutes until lentils are tender. Add more water if needed.
  6. Remove bay leaves; stir in lemon juice and adjust seasoning if necessary.
  7. Serve warm topped with chopped parsley.
