  • 1 teaspoon coconut extract
  • 1 cup coconut milk
  • 1 1/2 cups heavy whipping cream
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract
  • 1 cup sweetened shredded coconut (toasted or fresh)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream together softened butter and sugar until fluffy. Add eggs one at a time, followed by vanilla and coconut extracts.
  4. Alternate adding dry ingredients with coconut milk until combined.
  5. Divide batter between prepared pans and bake for 25–30 minutes or until a toothpick inserted comes out clean.
  6. Allow cakes to cool completely.
  7. For the frosting, beat cream cheese and powdered sugar until smooth; fold in whipped cream until combined.
  8. Layer the cakes with frosting and top with toasted coconut.
