  • 2 TBSP Instant coffee
  • 2 1/2 cups All-purpose flour
  • 1/2 tsp Baking soda
  • 1/2 tsp Baking powder
  • 1 tsp Salt
  • 1 tsp Ground cinnamon
  • 1 cup Unsalted butter (melted and cooled)
  • 1 cup Brown sugar (packed)
  • 1/2 cup White granulated sugar
  • 1 tsp Pure vanilla extract
  • 2 Large eggs
  • 1 1/2 cups Semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line two cookie sheets with parchment paper.
  2. Blend the instant coffee in a food processor until fine. In a medium bowl, sift together flour, baking soda, baking powder, salt, cinnamon, and powdered coffee.
  3. In a larger bowl, mix melted butter, brown sugar, white sugar, vanilla extract, and eggs until well combined.
  4. Gradually add the dry ingredients to the wet mixture using a rubber spatula. Fold in chocolate chips until just combined.
  5. Scoop dough onto prepared cookie sheets (about six scoops per sheet) and optionally top with extra chocolate chips.
  6. Bake for 12–14 minutes or until edges are golden brown but centers remain slightly underbaked for chewiness.
  7. Allow cookies to cool on the pan for five minutes before transferring to a wire rack.
