  • 1 cup Granulated sugar
  • 2 tsp Vanilla extract
  • 1 tbsp Espresso powder
  • 1/2 tsp Kosher salt
  • 2 Eggs
  • 1/3 cup Sour cream
  • 1/2 cup Buttermilk
  • 1 2/3 cup Flour
  • 1 1/3 tsp Baking powder
  • 1 1/3 cups Heavy cream
  • 1 tsp Espresso powder
  • 3 tbsp Powdered sugar
  • 1 tsp Vanilla extract
  • 1 tbsp Instant vanilla pudding

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, cream butter and sugar until fluffy. Add vanilla extract and espresso powder; mix well.
  3. Incorporate eggs one at a time, blend in sour cream and buttermilk until smooth.
  4. Gradually mix in flour and baking powder until just combined.
  5. Fill cupcake liners two-thirds full and bake for 18 minutes or until a toothpick comes out clean.
  6. For frosting, whip heavy cream until thickened, then add espresso powder and powdered sugar; whip to stiff peaks.
  7. Frost cooled cupcakes generously and top with additional espresso powder.
