  • ⅓ cup granulated sugar
  • 2 teaspoons instant yeast
  • ¾ teaspoon fine sea salt
  • ½ cup whole milk (slightly warmed)
  • 1 teaspoon instant coffee granules
  • 1 large egg (room temperature)
  • ½ teaspoon vanilla extract
  • Tangzhong (prepared from previous instructions)
  • 9 tablespoons unsalted butter (room temperature)
  • ⅔ cup dark brown sugar (or light brown sugar)
  • 2 teaspoons ground cinnamon
  • 2 oz cream cheese (softened)
  • 1 cup powdered sugar
  • 4 tablespoons heavy cream
  • ¾ teaspoon instant coffee granules

Instructions

  1. Prepare the Tangzhong by whisking water and flour in a saucepan over medium heat until thickened; set aside.
  2. In a mixing bowl, combine flour, sugar, yeast, and salt.
  3. Warm the milk and dissolve instant coffee; add to the dry mixture along with egg, vanilla extract, and Tangzhong. Mix until shaggy.
  4. Gradually knead in softened butter until smooth and elastic.
  5. Let the dough rise in a warm area until doubled in size (about 45-60 minutes).
  6. Make the filling by mixing butter, brown sugar, cinnamon, and instant coffee.
  7. Roll out the dough, spread the filling evenly, cut into strips, and shape into rolls.
  8. Bake at 325°F (163°C) until golden brown (20-23 minutes).
  9. For frosting, mix cream cheese with butter, powdered sugar, heavy cream, and instant coffee until smooth; frost cooled rolls.
