- 1 lb chicken or beef sausage
- 1 medium onion (finely chopped)
- 2 cloves garlic (minced)
- 4 cups potatoes (peeled and diced)
- 4 cups chicken broth
- 1 cup heavy cream
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp dried thyme
- 1 tbsp olive oil
- ½ cup cheddar cheese (shredded)
- Fresh parsley or green onions (for garnish)
Instructions
- In a skillet, heat olive oil over medium heat. Sauté chopped onion and minced garlic until translucent.
- Transfer sautéed onions and garlic to a slow cooker. Add diced potatoes, sausage, chicken broth, salt, pepper, thyme, and heavy cream.
- Cover and cook on low for about 6 hours until potatoes are tender.
- Stir in shredded cheese until melted just before serving. Garnish with fresh parsley or green onions.
