Ingredients

  • 500g minced chicken
  • 1 egg
  • 1 cup breadcrumbs
  • 2 tbsp milk
  • 2 cloves garlic, finely chopped
  • 1 tsp Italian herb blend
  • Salt & pepper to taste
  • 1 tbsp olive oil (for frying)
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 cup chicken stock
  • 1 cup heavy cream
  • 2 tbsp tomato paste
  • Salt & pepper to taste
  • Fresh parsley, chopped (for topping)

Instructions

  1. In a mixing bowl, combine minced chicken, egg, breadcrumbs, milk, garlic, Italian herbs, salt, and pepper. Mix until just combined and shape into small meatballs.
  2. Heat olive oil in a skillet over medium heat. Sear the meatballs until golden brown on all sides; remove from skillet and set aside.
  3. In the same skillet, add olive oil and sauté onion until translucent. Add bell peppers and garlic; cook until softened. Stir in smoked paprika followed by chicken stock, heavy cream, tomato paste, salt, and pepper.
  4. Return meatballs to the skillet; cover and simmer for 10-12 minutes until cooked through.
  5. Serve hot topped with fresh parsley.
