- 500g minced chicken
- 1 egg
- 1 cup breadcrumbs
- 2 tbsp milk
- 2 cloves garlic, finely chopped
- 1 tsp Italian herb blend
- Salt & pepper to taste
- 1 tbsp olive oil (for frying)
- 1 onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1 cup chicken stock
- 1 cup heavy cream
- 2 tbsp tomato paste
- Salt & pepper to taste
- Fresh parsley, chopped (for topping)
Instructions
- In a mixing bowl, combine minced chicken, egg, breadcrumbs, milk, garlic, Italian herbs, salt, and pepper. Mix until just combined and shape into small meatballs.
- Heat olive oil in a skillet over medium heat. Sear the meatballs until golden brown on all sides; remove from skillet and set aside.
- In the same skillet, add olive oil and sauté onion until translucent. Add bell peppers and garlic; cook until softened. Stir in smoked paprika followed by chicken stock, heavy cream, tomato paste, salt, and pepper.
- Return meatballs to the skillet; cover and simmer for 10-12 minutes until cooked through.
- Serve hot topped with fresh parsley.
