  • 1 (14 or 16 oz.) package broccoli florets
  • 1 c. shredded mild or medium cheddar cheese, divided
  • 1 (10 3/4 oz.) can cream of mushroom soup
  • 1/4 c. mayonnaise
  • 1/4 c. milk
  • 1 egg, lightly beaten
  • 1/8 tsp. salt
  • 1 1/2 c. Ritz and/or Keebler Club cracker crumbs
  • 1/4 c. butter, melted

Instructions

  1. Preheat the oven to 350°F.
  2. Thaw and drain the broccoli florets, cutting large pieces into smaller bites.
  3. In a mixing bowl, combine broccoli with half of the cheddar cheese, cream of mushroom soup, mayonnaise, milk, egg, and salt. Transfer this mixture to a greased baking dish.
  4. Sprinkle the remaining cheddar cheese on top.
  5. Mix cracker crumbs with melted butter until moistened; then spread over the casserole.
  6. Bake for 45-50 minutes until bubbly and golden brown.
