  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 4 cloves garlic, minced
  • 1 ½ cups heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Cook the penne pasta in salted boiling water until al dente. Drain and set aside.
  2. Toss chicken pieces with 1 tablespoon of Cajun seasoning until well-coated.
  3. In a skillet over medium-high heat, sauté the chicken in olive oil until cooked through and golden brown; remove from skillet.
  4. In the same skillet, add onion and bell peppers; cook until softened. Add garlic and sauté briefly.
  5. Pour in heavy cream and chicken broth; stir in Parmesan cheese and remaining Cajun seasoning. Simmer until slightly thickened.
  6. Return chicken to the skillet, then add drained pasta; toss to combine, adjusting seasoning as needed.
  7. Garnish with fresh parsley before serving.
