  • 12 oz rotini pasta
  • 4 cloves garlic
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. Cook the rotini in salted boiling water until al dente (about 9-10 minutes). Reserve 1 cup of pasta water and drain.
  2. In a skillet, heat olive oil and butter. Season the chicken with Cajun seasoning and garlic powder, then cook until golden brown (7-9 minutes). Remove from skillet.
  3. In the same skillet, melt more butter and sauté minced garlic briefly. Stir in heavy cream and milk; bring to a simmer.
  4. Add Velveeta cheese until melted. Mix in mozzarella and Parmesan until the sauce thickens.
  5. Combine the cooked rotini with the sauce, adding reserved pasta water as needed for consistency.
