Ingredients
- 12 oz pasta (fettuccine, linguine, or spaghetti)
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 12 oz oyster mushrooms, cleaned and sliced
- ½ cup dry apple vinegar or broth
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese
- Fresh parsley or basil for garnish

- Cook pasta in a large pot of salted water according to package directions until al dente. Reserve ½ cup of pasta water, then drain.
- In a skillet, heat olive oil over medium heat. Sauté onion for about 3–4 minutes until soft. Add garlic and cook until fragrant.
- Stir in oyster mushrooms and sauté until golden (6–8 minutes).
- Deglaze the skillet with apple vinegar (or broth) and simmer until mostly evaporated.

- Toss cooked pasta into the sauce along with reserved pasta water until evenly coated.
