  • Salt and pepper
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 cups cooked jasmine or basmati rice
  • Fresh parsley for garnish

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium heat. Sear the chicken for 5–7 minutes per side until golden brown. Set aside.
  3. In the same skillet, sauté diced onion for 3–4 minutes, then add minced garlic for another minute.
  4. Pour in chicken broth, scraping up browned bits from the pan.
  5. Lower heat and stir in heavy cream, Dijon mustard, paprika, garlic powder, and onion powder; simmer for about 5 minutes.
  6. Mix in shredded cheese until melted.
  7. Return chicken to the skillet, spoon sauce over it, and simmer for an additional 3–4 minutes to warm through.
  8. Serve smothered chicken over cooked rice and garnish with fresh parsley.
