- 4 lemons (peel only)
- 1 liter milk (UHT)
- 600 grams granulated sugar
- 1 vanilla bean
- 500 mL fruit juice (as alcohol substitute)
Instructions
- Wash the lemons thoroughly and peel them carefully to avoid the bitter white pith.
- Place the lemon peels in a mason jar and pour in your chosen fruit juice. Seal tightly and let it steep in a cool dark place for at least 6 days, swirling daily.
- After steeping, strain the mixture using cheesecloth into a clean bottle.
- In a large saucepan, warm the milk, sugar, and split vanilla bean over medium-low heat while whisking until dissolved. Allow it to cool completely.
- Combine the cooled creamy mixture with the strained lemon infusion and mix well.
- Strain once more into a decanter and refrigerate or freeze until ready to serve.
