Ingredients

  • 4 lemons (peel only)
  • 1 liter milk (UHT)
  • 600 grams granulated sugar
  • 1 vanilla bean
  • 500 mL fruit juice (as alcohol substitute)

Instructions

  1. Wash the lemons thoroughly and peel them carefully to avoid the bitter white pith.
  2. Place the lemon peels in a mason jar and pour in your chosen fruit juice. Seal tightly and let it steep in a cool dark place for at least 6 days, swirling daily.
  3. After steeping, strain the mixture using cheesecloth into a clean bottle.
  4. In a large saucepan, warm the milk, sugar, and split vanilla bean over medium-low heat while whisking until dissolved. Allow it to cool completely.
  5. Combine the cooled creamy mixture with the strained lemon infusion and mix well.
  6. Strain once more into a decanter and refrigerate or freeze until ready to serve.
