Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 ½ tbsp granulated sugar
  • 2 eggs
  • ¾ cup whole milk
  • ½ cup water
  • 3 tbsp unsalted butter
  • ½ cup castor sugar (for the sauce)
  • ¾ cup orange juice
  • Thinly sliced orange peel

Instructions

  1. In a mixing bowl, whisk together flour, sugar, and salt. In another bowl, beat eggs with vanilla extract, then add milk and water gradually while whisking. Combine dry ingredients into the liquid mixture until smooth. Let rest for 15 minutes.
  2. Heat a non-stick skillet over medium heat and melt 1 tbsp butter. Pour about ¼ cup batter into the skillet, swirling to form an even layer. Cook until lightly golden (about 2 minutes), then flip and cook for another minute. Transfer to a warm plate and repeat.
  3. For the sauce, melt remaining butter in a pan over medium heat with castor sugar until dissolved. Stir in orange peel and juice; simmer for about 5 minutes until slightly thickened.
  4. Fold crepes into quarters and place in the sauce pan to soak briefly before serving.
