Ingredients

Scale
  • pounds Brussels sprouts (trimmed and halved)
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper (to taste)
  • 2 tablespoons balsamic vinegar
  • 1½ tablespoons honey
  • 1 teaspoon Dijon mustard (optional)
  • 1 small garlic clove (finely minced, optional)
  • Red pepper flakes (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Trim the ends of the Brussels sprouts and slice them in half. Pat dry with a clean towel.
  3. In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and freshly ground black pepper until evenly coated.
  4. Spread the seasoned Brussels sprouts cut-side down on a parchment-lined baking sheet, ensuring they’re not overcrowded.
  5. Roast for 20–25 minutes, flipping halfway through until golden brown and crispy.
  6. In a small saucepan over low heat, combine balsamic vinegar, honey, and Dijon mustard (if using). Simmer for 2–3 minutes until slightly thickened.

  8. Serve hot, sprinkled with red pepper flakes if desired.
