Ingredients
- 2 slices Turkey turkey bacon (cooked, drained, and finely sliced)
- 1 large yellow onion (diced)
- 1 cup carrots (thinly sliced)
- ¾ cup celery (diced)
- 1 tsp salt
- 1½ tsp black pepper
- 4 tsp garlic (minced)
- 1 tsp dried thyme
- 1 tsp dried basil
- ½ tsp dried parsley
- 1 tbsp tomato paste
- 2 (15 oz) cans crushed tomatoes
- 2 (15 oz) cans cannellini beans (drained and rinsed)
- 4 cups low sodium chicken broth
- 6 cups water
- 1 (16 oz) box of ditalini pasta (uncooked)
- 1 cup Parmesan Reggiano
Instructions
- In a skillet over medium heat, cook turkey turkey bacon until crispy, then drain and slice.
- In the slow cooker, combine sliced bacon with diced onion, sliced carrots, diced celery, salt, pepper, minced garlic, thyme, basil, parsley, tomato paste, crushed tomatoes, cannellini beans, chicken broth, and water. Stir well to combine.
- Cover and cook on low for 7–8 hours or high for 4–5 hours.
- About 30 minutes before serving, add uncooked ditalini pasta to the mixture and stir occasionally until tender.
- Serve hot topped with freshly grated Parmesan Reggiano cheese.
