  • 2 cans (10 oz each) fire roasted tomatoes and green chiles
  • 2 cans (15 oz each) cannellini beans
  • 1/2 cup Frank’s Buffalo Sauce
  • 2 cups low sodium chicken broth
  • 4 oz cream cheese (room temperature)
  • 4 oz blended cottage cheese

Instructions

  1. Prepare your ingredients by placing all components (except the cream cheese and cottage cheese) into the slow cooker.
  2. Stir to combine, then cover and cook on low for 4-6 hours or high for 3-4 hours until the chicken is fully cooked.
  3. Remove the chicken and shred it using forks or a hand mixer.
  4. Add cream cheese to the slow cooker, whisk until smooth, then return the shredded chicken to the pot.
  5. Cover again and cook on low for an additional 30 minutes.
  6. Stir in blended cottage cheese before serving. Adjust seasoning if needed.
