  • 1 large green bell pepper, thinly sliced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup sour cream
  • 1 cup beef broth (or water)
  • 2 cups shredded provolone cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 tablespoon olive oil

Instructions

  1. Brown the beef in a skillet with olive oil over medium-high heat until just browned. Drain excess fat if needed.
  2. Slice onions and green bell peppers into thin strips.
  3. Layer ingredients in the slow cooker: first potatoes, then half the beef, onions, peppers, and cheese; repeat layers.
  4. In a bowl, mix cream of mushroom soup, sour cream, and beef broth until smooth. Pour over the casserole layers.
  5. Cover and cook on low for 6 hours or high for 3 hours until potatoes are tender.
