  • Juice of 2 limes
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp cumin
  • ½ tsp oregano
  • Salt & pepper to taste
  • 1 can black beans, rinsed
  • 1 tsp olive oil
  • ½ tsp cumin
  • ¼ tsp smoked paprika
  • Salt to taste
  • 2 ripe plantains, sliced
  • Olive oil spray
  • Salt
  • 2 cups cooked white rice or mixed greens
  • Fresh cilantro, lime wedges

Instructions

  1. Marinate the beef: Mix orange juice, lime juice, olive oil, garlic, cumin, oregano, salt, and pepper in a mixing bowl. Add beef slices and marinate for at least 30 minutes.
  2. Cook black beans: In a small pan over medium heat, warm olive oil and add rinsed black beans with cumin and smoked paprika. Heat for 5-7 minutes; season with salt.
  3. Prepare plantains: Preheat air fryer to 375°F or heat a frying pan. Slice plantains, lightly spray with olive oil, and cook until golden brown (10-12 minutes in air fryer).
  4. Assemble bowls: Place cooked rice or mixed greens in bowls. Top with marinated beef slices, seasoned black beans, crispy plantains, fresh cilantro, and lime wedges.
