  • 67 medium Yukon Gold potatoes, thinly sliced
  • ½ white or yellow onion, cut into slices
  • 2 tablespoons salted butter
  • ¼ cup all-purpose flour
  • 1 ½ cups unsweetened almond milk
  • 8 ounces sharp cheddar cheese, shredded
  • ½ teaspoon garlic powder
  • ¾ teaspoon salt, plus more to taste
  • Freshly ground black pepper
  • ½ cup gruyere cheese, shredded (or sub more sharp cheddar)
  • ¼ cup grated parmesan
  • Fresh chopped parsley for garnish

Instructions

  1. Preheat the oven to 375°F. Grease a baking dish.
  2. Arrange sliced potatoes and onions in rows in the dish.
  3. In a saucepan, melt butter over medium heat; whisk in flour and gradually add almond milk until thick.
  4. Stir in cheddar cheese, garlic powder, salt, and pepper until smooth; pour over potatoes.
  5. Cover with foil and bake for 45 minutes.
  6. Remove foil, add gruyere and parmesan on top, then bake uncovered for another 30-45 minutes until golden brown. Garnish with parsley before serving.
