Ingredients
- 3 ½ cups fresh ginger, peeled
- 4 cups water
- 5 cups white sugar
- 1 (3 oz) pouch liquid pectin
- 5 half pint canning jars with lids
Instructions
- Cut ginger in half; cube one half and shred the other.
- In a large pot, combine cubed ginger with water and simmer for 1 hour and 15 minutes. Reserve ½ cup of liquid after draining.
- Chill the cooked ginger in the fridge for at least 4 hours.
- In a pot, mix the chilled ginger, reserved liquid, and sugar. Boil for 1 minute.
- Stir in pectin and simmer for another 7 minutes, skimming off foam as needed.
- Sterilize jars by boiling them in water.
- Fill each jar with marmalade, leaving about a ¼ inch space at the top. Remove air bubbles and wipe rims before sealing.
- Process jars in a water bath for about 15 minutes to seal properly.
- Allow cooling completely before checking seals and storing.
