Ingredients
- 1 cup cooked quinoa
- 1 cup grated zucchini
- 1 cup grated carrot
- 1 can canned chickpeas (lightly mashed)
- 1 cup bell pepper (any color)
- 2 green onions (finely chopped)
- 2 tbsp soy sauce
- 1 cup breadcrumbs (or gluten-free)
- 1 large egg (or flax egg)
- Olive oil for cooking
Instructions
- Preheat your oven to 375°F (190°C) and prepare a baking sheet lined with parchment paper.
- In a mixing bowl, combine cooked quinoa, grated zucchini, grated carrot, and lightly mashed chickpeas along with chopped bell pepper and green onions.
- Stir in soy sauce, garlic powder, onion powder, ground cumin, smoked paprika, salt, and pepper until well mixed.
- Add breadcrumbs and an egg (or flax egg) to bind the mixture together.
- Shape the mixture into patties about 3 inches wide and ¾ inch thick.
- Brush each patty with olive oil and bake for about 20 minutes until golden brown on both sides.
