  • 1/2 c Dutch process cocoa or unsweetened cocoa
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 2 large eggs (at room temperature)
  • 1/4 c unsalted butter (melted and slightly cooled)
  • 1/4 c canola oil (vegetable oil or melted coconut oil)
  • 3/4 c packed light brown sugar
  • 1 tsp pure vanilla extract
  • 1 1/2 c packed shredded zucchini
  • 1 c semisweet chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F and grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and sea salt.
  3. In a large bowl, mix together eggs, melted butter, oil, brown sugar, and vanilla until smooth.
  4. Gently fold the dry ingredients into the wet mixture until just combined. Add shredded zucchini and 3/4 cup of chocolate chips; mix gently.
  5. Pour the batter into the prepared pan and sprinkle remaining chocolate chips on top.
  6. Bake for 50-60 minutes or until a toothpick inserted comes out mostly clean.
  7. Let cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
