Ingredients
- 1 ⅓ cups milk (preferably 2%)
- 2 tablespoons loose leaf Earl Grey tea (or 2 teabags)
- 1 whole vanilla bean
- 5 large egg yolks
- ⅓ cup granulated sugar
- 1 cup heavy cream
- 4 tablespoons granulated sugar (for topping)
Instructions
- Infuse the Milk: In a saucepan, combine milk, split vanilla bean (with seeds), and Earl Grey tea over medium heat. Bring to a boil; remove from heat and let steep for 10 minutes. Strain to discard solids.
- Preheat Oven: Preheat your oven to 160°C (320°F) and prepare a water bath by boiling water.
- Mix Egg Yolks and Cream: In a bowl, whisk together egg yolks and sugar until smooth. Add heavy cream, infused milk, and sea salt; stir until combined.
- Bake: Pour mixture into ramekins placed in a baking tray. Carefully fill the tray with boiling water halfway up the sides of the ramekins. Bake for 25-30 minutes until set but slightly jiggly.
- Chill: Remove from water bath; cool to room temperature then refrigerate for at least 3 hours or overnight.
- Caramelize Sugar: Before serving, sprinkle sugar on top of each custard and use a kitchen torch or broiler to caramelize until golden.
