  • 3 egg whites
  • ½ cup vegetable oil
  • ½ cup Greek yogurt
  • ¾ cup whole milk
  • pink gel food coloring
  • yellow gel food coloring
  • blue gel food coloring
  • 5.1 ounces instant vanilla pudding mix
  • 2 ¾ cups whole milk
  • 2 cups heavy cream
  • 3 Tablespoons granulated sugar
  • 1 cup sweetened shredded coconut
  • Easter sprinkles and/or candy (optional topping)

Instructions

  1. Preheat oven to 350°F (175°C). In a large mixing bowl, combine cake mix, egg whites, vegetable oil, Greek yogurt, whole milk, and gel food coloring. Mix on medium speed until combined.
  2. Pour batter into a greased 9×13 inch baking pan and bake for about 25 minutes or until a toothpick comes out clean.
  3. Cool the cake for 10 minutes before transferring it to a wire rack. Once cooled completely, poke holes in the top using a fork.
  4. In another bowl, whisk together instant pudding mix and 2 ¾ cups of whole milk until thickened. Pour evenly over the holes in the cake.
  5. Whip heavy cream with sugar until soft peaks form; spread over the pudding layer.
  6. Top with shredded coconut and sprinkles or candy as desired.
