  • 250 g microwave rice (Mexican-flavored)
  • 200 g fresh salsa
  • 400 g black beans
  • 125 g grated mozzarella cheese
  • 2 tsp sunflower oil
  • 1 onion (peeled and chopped)
  • 1 tsp mild chili powder
  • 1 tsp sweet smoked paprika
  • 2 tsp ground cumin
  • 1 tbsp dark brown sugar
  • 3 tbsp tomato puree
  • 1 beef stock cube (undiluted and crumbled)
  • 100 ml boiling water
  • Salt and freshly ground black pepper

Instructions

  1. In a skillet, heat sunflower oil over medium heat. Add beef mince and brown for about 5 minutes.
  2. Stir in chopped onion and spices; cook until onions soften (around 5 minutes).
  3. Mix in tomato puree, crumbled stock cube, boiling water, salt, and pepper; simmer for 15 minutes.
  4. Meanwhile, heat tortillas and cook microwave rice as per package instructions.
  5. Assemble burritos by layering rice, beef mixture, salsa, black beans, and cheese on each tortilla; roll tightly.
