  • 1 cup (120g) chow mein noodles
  • 1 1/2 cups (250g) milk chocolate chips
  • 1 tbsp coconut oil or vegetable shortening (optional)
  • 1/2 cup (100g) milk or dark chocolate chips for filling
  • 1 tsp coconut oil or butter (optional for filling)
  • Pastel candy eggs (2–4 per cookie, depending on size)
  • Optional: Colorful sprinkles or nonpareils

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, and salt. In another bowl, beat softened butter with granulated and brown sugars until fluffy. Add vanilla extract and egg; mix well. Gradually add dry ingredients until combined.
  3. Scoop tablespoon-sized dough portions onto the baking sheet, flattening into disks. Bake for 8–10 minutes until edges are set. Cool completely.
  4. Melt milk chocolate chips in a microwave-safe bowl; add optional coconut oil if desired. Coat chow mein noodles in chocolate and form into nests on cooled cookies.
  5. Melt more chocolate for filling; spoon into the nest hollows and let set before adding candy eggs.
