  • 2 medium zucchini
  • 2 medium yellow squash
  • 4 tablespoons chopped fresh basil
  • 2 tablespoons thinly sliced green onion
  • 1/2 teaspoon dried thyme
  • 3/4 teaspoon garlic powder
  • 1 cup grated mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 350°F (180°C). Grease an 8" x 8" or an 8" x 11" baking dish.
  2. Slice the zucchini and yellow squash into half-moon shapes.
  3. In a mixing bowl, combine sliced vegetables with chopped basil, garlic powder, half the mozzarella, half the Parmesan, salt, and pepper. Mix well.
  4. Transfer the mixture to the prepared baking dish and bake uncovered for 25-30 minutes until mostly tender.
  5. Remove from oven, top with remaining cheeses, and return to bake for another 10-15 minutes until cheese is melted and bubbly.
  6. Let it rest for a few minutes before serving hot.
