  • 2 medium zucchini
  • 2 medium yellow squash
  • 4 tablespoons chopped fresh basil
  • 2 tablespoons thinly sliced green onion
  • 1/2 teaspoon dried thyme
  • 3/4 teaspoon garlic powder
  • 1 cup grated mozzarella cheese
  • 1/2 cup coarsely grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 350°F (180°C) and spray your baking dish with olive oil.
  2. Wash and slice the zucchini and yellow squash.
  3. Chop the basil and slice the green onions.
  4. In a mixing bowl, combine the zucchini, yellow squash, basil, green onions, thyme, garlic powder, half of the mozzarella cheese, and half of the Parmesan. Season with salt and pepper.
  5. Transfer the mixture to the prepared baking dish and bake uncovered for 25-30 minutes until tender.
  6. Sprinkle with remaining mozzarella and Parmesan cheese; return to oven for an additional 10-15 minutes until golden brown.
  7. Allow to cool slightly before serving.
