  • ½ cup Vegetable oil (neutral-flavored)
  • 1 cup Buttermilk (room temperature)
  • 1 cup Hot coffee
  • 8 oz Semisweet chocolate (melted and cooled)
  • 2 cups Heavy whipping cream (cold)
  • 1 tbsp Powdered sugar
  • 1 tsp Vanilla extract
  • 6 oz Bittersweet chocolate (finely chopped)
  • ¾ cup Heavy cream (heated)
  • 1 tbsp Light corn syrup
  • 1 tbsp Butter (room temperature)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round baking pans.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat eggs, vegetable oil, buttermilk, and hot coffee until combined.
  4. Gradually mix the wet ingredients into the dry ingredients until smooth.
  5. Divide batter between prepared pans and bake for 25–30 minutes or until a toothpick comes out clean. Allow to cool completely.
  6. Melt semisweet chocolate using a double boiler or microwave; let it cool slightly.
  7. Whip heavy cream with powdered sugar and vanilla until stiff peaks form.
  8. Fold melted chocolate into whipped cream gently until combined.
  9. Assemble by layering cake and mousse in a springform pan; refrigerate for at least 3 hours to set.
  10. For ganache, heat heavy cream until simmering; pour over chopped bittersweet chocolate and stir until smooth. Add corn syrup and butter for shine.
  11. Pour ganache over the chilled mousse layer; serve after slicing.
