- 1 bell pepper
- ½ onion
- Fresh spinach
- 2 tablespoons tomato paste
- 1½ tablespoons olive or avocado oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon chili powder
- ½ teaspoon dried oregano
- ¼ teaspoon paprika
- 1 teaspoon garlic (minced)
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon dried basil
- ½ cup water
Instructions
- In a large skillet over medium-high heat, cook the ground turkey (or beef) until browned, breaking it apart with a spatula.
- Season with salt, pepper, chili powder, oregano, paprika, and minced garlic; sauté for one additional minute.
- Remove meat from the skillet and set aside.
- In the same skillet, add oil and sauté cubed zucchini, onion, and bell pepper until tender.
- Return the meat mixture to the skillet; add water, tomato paste, and fresh spinach; stir well.
- Cover and simmer for 5–10 minutes until heated through.
