  • 2 pounds lean ground beef
  • 1/4 cup red apple vinegar
  • 14.5 ounce can diced tomatoes, undrained
  • 4 cups tomato juice
  • 2 cans (15 ounces each) pinto beans, undrained
  • 1 can (16 ounces) kidney beans, undrained
  • 1 tablespoon light brown sugar
  • 3 tablespoons chili powder
  • 3/4 teaspoon garlic salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper (or more if you want it spicier)
  • Cornmeal (optional)

Instructions

  1. Heat olive oil in a large soup pot over medium-high heat.
  2. Add diced onion; cook until translucent (about 5 minutes).
  3. Add ground beef; brown while breaking it apart with a wooden spoon. Drain excess grease.
  4. Stir in red apple vinegar and cook for 1 minute.
  5. Add diced tomatoes, tomato juice, beans, brown sugar, and spices; bring to a boil.
  6. Reduce heat to medium-low and simmer for at least one hour (up to three hours), stirring occasionally.
  7. Optionally stir in cornmeal during the last 30 minutes for thickness.
  8. Serve hot with desired toppings.
