  • 2 cups boiling water
  • 3 cups curly parsley (minced)

  • 1/4 cup fresh mint (minced)
  • 1 1/2 cups roma tomatoes (diced)
  • 1/2 cup extra virgin olive oil
  • 1/2 cup fresh lemon juice
  • 1 1/2 teaspoons kosher salt

Instructions

  1. Soak the bulgur in boiling water for at least 30 minutes until tender.

  3. Whisk together olive oil, lemon juice, and salt in another bowl until well mixed.
  4. Drain the bulgur using a colander lined with cloth to remove excess water.
