  • ½ cup very cold butter
  • 1 egg
  • 2½ cups sliced peaches (fresh or well-drained canned)
  • 1½ tablespoons sugar (for peaches)

Instructions

  2. In a medium bowl, mix sliced peaches with 1½ tablespoons of sugar; set aside.
  3. In a large bowl, whisk together flour (starting with 2¼ cups), sugar, baking powder, and salt. Cut in very cold butter until crumbly. Add one egg and mix until just combined.
  4. Press about ½ to ⅔ of the crumb mixture into the bottom of the prepared pan. Spoon the peach mixture over the base layer and sprinkle remaining crumbs on top.
  5. Bake for 30-40 minutes or until golden brown on top. Allow cooling before serving.
