- 1/2 cup diced green bell pepper
- 1/4 cup diced onion
- 1 pound ground turkey
- 1 large egg – lightly beaten
- 1/3 cup breadcrumbs
- 1 tablespoon ketchup
- 1 tablespoon Dijon mustard
- 2 teaspoons vinegar
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/4 cup ketchup (for glaze)
- 1 tablespoon chili sauce
- 1 tablespoon maple syrup
- Salt and pepper – to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Sauté diced bell pepper and onion in one tablespoon of olive oil over medium heat until soft; set aside to cool.
- In a mixing bowl, combine ground turkey, beaten egg, breadcrumbs, ketchup, Dijon mustard, vinegar, garlic powder, Italian seasoning, salt, and pepper. Gently mix in the cooled vegetables without overmixing.
- Shape the mixture into mini loaves and place them on the prepared baking sheet.
- Whisk together ketchup, chili sauce, maple syrup, vinegar, salt, and pepper in a small bowl to make the glaze. Brush it onto each mini loaf.
