  • 1 cup pineapple chunks (fresh or canned)

  • 2 tablespoons honey
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground ginger
  • 1 cup long-grain white rice
  • 2 cups water

Instructions

  1. Rinse the rice under cold water until clear. Combine rinsed rice and water in a saucepan; bring to a boil. Reduce heat, cover, and simmer for 15–18 minutes until tender. Set aside.
  2. Heat olive oil in a large skillet over medium heat; add chicken pieces and cook for 5–7 minutes until golden.
  3. Stir in onion; cook for 2–3 minutes. Add garlic; cook for another 30 seconds.
  4. Mix in pineapple chunks, soy sauce, honey, black pepper, and ground ginger; stir well.
  5. Reduce heat to low and simmer for 5–7 minutes until the sauce thickens slightly.
