  • 2 cups apple cider
  • 1/2 cup beef broth
  • 1 large onion (chopped)
  • 2 medium carrots (peeled and chopped)
  • 6 large potatoes
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1 cup sharp cheddar cheese (shredded)
  • 3 tablespoons chives

Instructions

  1. Preheat your oven to 375°F.
  2. In a large skillet, melt butter with olive oil over medium-high heat. Season beef with salt and pepper, then brown all sides for about 6-8 minutes.
  3. Add onions and carrots to the skillet; cook until softened (about 4-5 minutes).
  4. Stir in flour; add apple cider and beef broth. Bring to a boil before transferring to an oven-safe pan.
  5. Cover and bake for 1 to 1½ hours until tender.
  6. Meanwhile, boil peeled and chopped potatoes until tender. Drain and mash with milk, sour cream, cheddar cheese, and chives until smooth.
