Ingredients
- 30 g unsalted butter
- 1 large leek, finely chopped (white part only)
- 1 medium carrot, chopped
- 5 medium potatoes, peeled and cubed
- 1.25 liters fish stock
- 450 g salmon fillets, skinned and cubed
- 150 ml double cream
- 1 bunch dill, roughly chopped
- Salt and pepper to taste
Instructions
- In a large heavy-bottomed pot, melt the butter over medium heat. Add the chopped leek and sauté for 7-8 minutes until soft.
- Add the carrot and potatoes to the pot, then pour in the fish stock until it covers the vegetables. Cook for about 10 minutes until the potatoes are nearly fork-tender.
- Stir in the salmon cubes and double cream. Simmer gently for another 3-4 minutes until the salmon is cooked through.
- Just before serving, add fresh dill and season with salt and pepper to taste.
