  • 30 g unsalted butter
  • 1 large leek, finely chopped (white part only)
  • 1 medium carrot, chopped
  • 5 medium potatoes, peeled and cubed
  • 1.25 liters fish stock
  • 450 g salmon fillets, skinned and cubed
  • 150 ml double cream
  • 1 bunch dill, roughly chopped
  • Salt and pepper to taste

Instructions

  1. In a large heavy-bottomed pot, melt the butter over medium heat. Add the chopped leek and sauté for 7-8 minutes until soft.
  2. Add the carrot and potatoes to the pot, then pour in the fish stock until it covers the vegetables. Cook for about 10 minutes until the potatoes are nearly fork-tender.
  3. Stir in the salmon cubes and double cream. Simmer gently for another 3-4 minutes until the salmon is cooked through.
  4. Just before serving, add fresh dill and season with salt and pepper to taste.
