  • Canned Kidney Beans (15 oz can, drained and rinsed)
  • Canned Cannellini Beans (15 oz can, drained and rinsed)
  • Canned Black Beans (15 oz can, drained and rinsed)
  • Canned Pinto Beans (15 oz can, drained and rinsed)
  • Fresh Green Beans (8 oz, trimmed and blanched)
  • Red Onion (1/2 medium, thinly sliced)
  • Red Bell Pepper (1 medium, diced)
  • Fresh Parsley (1/4 cup, chopped)
  • Olive Oil (1/2 cup, extra virgin)
  • Apple Cider Vinegar (1/4 cup)
  • Dijon Mustard (3 tablespoons)
  • Garlic (2 cloves, minced)
  • Honey or Maple Syrup (1 tablespoon)
  • Dried Oregano (1 teaspoon)
  • Salt (1 teaspoon, or to taste)
  • Black Pepper (1/2 teaspoon, freshly ground, or to taste)

Instructions

  1. Blanch the trimmed green beans in boiling salted water for 2–3 minutes until bright green. Transfer to ice water to cool, then cut into bite-sized pieces.
  2. Thinly slice red onion and dice red bell pepper.
  3. Rinse and drain all canned beans thoroughly.
  4. To prepare the dressing, whisk together olive oil, apple cider vinegar, Dijon mustard, minced garlic, honey or maple syrup, dried oregano, salt, and pepper.
  5. In a large bowl, combine all prepared vegetables and rinsed beans. Drizzle with the garlicky mustard dressing.
  6. Toss gently to coat everything evenly and refrigerate for at least 30 minutes before serving.
