- Canned Pinto Beans (15 oz can, drained and rinsed)
- Fresh Green Beans (8 oz, trimmed and blanched)
- Red Onion (1/2 medium, thinly sliced)
- Red Bell Pepper (1 medium, diced)
- Fresh Parsley (1/4 cup, chopped)
- Olive Oil (1/2 cup, extra virgin)
- Apple Cider Vinegar (1/4 cup)
- Dijon Mustard (3 tablespoons)
- Garlic (2 cloves, minced)
- Honey or Maple Syrup (1 tablespoon)
- Dried Oregano (1 teaspoon)
- Salt (1 teaspoon, or to taste)
- Black Pepper (1/2 teaspoon, freshly ground, or to taste)
Instructions
- Blanch the trimmed green beans in boiling salted water for 2–3 minutes until bright green. Transfer to ice water to cool, then cut into bite-sized pieces.
- Thinly slice red onion and dice red bell pepper.
- Rinse and drain all canned beans thoroughly.
- To prepare the dressing, whisk together olive oil, apple cider vinegar, Dijon mustard, minced garlic, honey or maple syrup, dried oregano, salt, and pepper.
- In a large bowl, combine all prepared vegetables and rinsed beans. Drizzle with the garlicky mustard dressing.
- Toss gently to coat everything evenly and refrigerate for at least 30 minutes before serving.
