- 4 large egg yolks

- Add cold cubed butter until pea-sized pieces form.
- Mix in the egg and vanilla extract until a dough forms. Chill in the fridge for at least an hour.
- Roll out the dough on a floured surface, fit into a tart pan, poke holes in the bottom, and freeze for 20 minutes.
- Preheat oven to 350°F (180°C) and bake the crust for 15-20 minutes or until golden brown. Let it cool.
- For the filling, combine lemon juice, zest, sugar, butter, salt, eggs, and yolks in a saucepan over medium heat while whisking until thickened.
