  • 1/3 cup grated Parmesan cheese
  • 4 ounces shredded Gruyère cheese
  • 6 ounces shredded Havarti cheese
  • 1 ½ cups beef broth
  • Fresh thyme
  • Salt
  • Pepper
  • 1/3 cup almond meal for gluten free version (or bread crumbs if preferred)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine ground chicken, egg, minced garlic, chopped onion, Parmesan cheese, salt, pepper, and almond meal until well mixed.
  3. Form into meatballs using a scoop and place them evenly on the baking sheet.
  4. Bake for 15-20 minutes until cooked through (internal temperature of 165°F).
  5. In a skillet over medium heat, melt butter and olive oil. Add sliced yellow onions and cook until golden brown (about 25 minutes). Stir in minced garlic for one additional minute.
  6. Pour in beef broth along with thyme, onion powder, salt, and pepper; bring to a boil then reduce to simmer until thickened (around 5 minutes).
  7. Add baked meatballs to the skillet and cook together for about 5 minutes. Top with shredded cheeses and cover until melted.
